Whole wheat Banana walnut cake

Whole wheat Banana walnut cake is something I prepare when ever I have ripe bananas at home and this happens quite often :). I share this cake with my friends and they call it as Swathi’s cake, Thanks for the compliments . Idea of this recipe came from Indira’s carrot cake and I made few changes to original  recipe by adding eggs and replacing half of all purpose flour with whole wheat flour.

Using cardamom in cake might sound weird but it goes well with Banana and nuts combination. Baking walnuts in the cake gives them a different texture and toasted flavor, so give it a try even if you don’t like walnuts. This cake is a good one to try for moms who like to serve home made cakes and bread instead of those fatty grocery store cakes.

 

 Ingredients:

  1. Bananas –  2 (ripe)
  2. Whole wheat flour – 1 Cup
  3. All purpose flour – 1 Cup
  4. Sugar  – 1 Cup
  5. Oil – ¹⁄3 Cup
  6. Egg Whites – 4 ( can use 2 whole eggs)
  7. Walnuts chopped – 1 Cup
  8. Raisins – ¼ Cup
  9. Baking soda – 1 tsp
  10. Cardamom powder – ½ tsp ( can use Vanilla Essence)

Method:

  • Preheat oven to 350F
  • Grease 8″ pan ready for baking
  • Mix all dry ingredients flours, soda and cardamom powder in a bowl.
  • Mash or blend bananas into smooth paste.
  • Beat egg whites and mix it well with mashed banana, sugar, oil in a separate bowl.
  • Mix the contents of dry ingredients bowl into wet ingredients bowl and gently fold (mix) until everything is properly mixed
  • Add nuts and raisins to the batter, mix again.
  • Pour batter into the 8” cake pan and place it in oven for 35 to 50 minutes until a toothpick or knife inserted into the center of the cake comes out clean.
  • Cool it and apply frosting/decoration or  cut pieces and serve it.
  • Cake without frosting can be stored 5 to 7 days.

Banana Walnut Cake

Made a square cake for my nephew’s first month birthday and shape it as number 1 as below. Cake is decorated with Nutella hazelnut spread,banana and chocolate chips. I will write another blog for how to make number cakes.

    I like the idea of icing and deco u made here. I guess chocolate and banana with nuts goes well. ummmm!!!!!

    I tried this w/o egg but 1/2 cup oil . Turned well.
