Aloo Chole

Aloo Chole without Onion and Garlic ~ Garbanzo Bean Potato Curry

This is a vegetarian recipe without onion and garlic. One of my friend observes fasting for “Karthika Masam” (An auspicious month which starts the day after diwali ) during which he does pooja in the morning , fasts until he goes to temple in the evening and has only vegetarian light meals without onion and garlic. A common family friends of us planned for a weekend gathering and the lady had a challenge to cook a gravy curry without “onion and garlic” which goes with poori. I took it over and made “Aloo Chole” , replacing onion with boiled and mashed potato which gave it a thick gravy consistency .

Roasted Red Pepper Chutney

I bought a pack of red peppers from Costco for preparing salad. But later, I was not in a mood for salad, so changed my plan for preparing a dish with roasted peppers. To keep them handy, I roasted  peppers and refrigerated them for couple of days. I was doing Ragi Oats Idli for lunch and instead of making traditional chutney, I wanted to use these roasted peppers, which were handy. Since I used roasted peppers, there was no obvious flavor or smell of peppers.

Ragi Oats idlys with roasted red pepper chutney was our lunch today. I wanted to have idli with out rice, so tried ragi along with oats and it was just perfect. There are so many instant recipes with ragi oats in various blogs but I wanted to include urad for the protien content. Because of urad dal these idlies need to ferment like traditional ones. Since I live in cold climate, batter didn’t ferment properly, so I added Eno fruit salt just before steaming. As I wanted they turned out soft and pluffy and with the combination of roasted red pepper chutney they were awesome.

When I have oats granola as a snack or read muesli recipes, I feel that it is a sweeter version of Indian chiwda, so I wanted to make this granola spicy and make it close to Indian chiwda. Recently I saw cornflakes mixture from one of my favorite blogger Sailu so I finally got motivation to make spicy granola as Diwali tea time snack. As the oats were toasted, they no more had the powdery texture while chewing. For those looking for oats recipes here is a munchkin for tea time.

Pulihora (sour rice) made with either lime juice or tamarind juice is commonly made rice dish for festivals.For the first day of Sankranthi festival (Bhogi), I made Pulihora  with lime and beetroot which is huge hit in my home.

Festivals are all about enjoying savory snacks, sweets and  spending holidays with dear and close people.For this year Sankranthi my cousins came over to my place and we celebrated festival with healthy and authentic homemade food, a feel good movie, nostalgic memories of festival in our childhood  and had loads of fun. I made Beetroot pulihora and oats walnut date balls for Bhogi day ( the first day of 3 day celebrations).

I love orange and lime flavor in cakes, muffins and pies. When I first saw this cake on fat freevegan, I instantly liked the idea of chocolate and orange. I bookmarked this recipe and decided to do it for new year eve. To make it fat free Susan used soy yogurt instead of oil; non vegans can use low fat dairy yogurt  instead of oil; I used oil this time. This cake is not very sweet but by using icing it had enough sweet and its not light and fluffy but is dense since it uses whole wheat flour.

When I first came to US, one of my friends introduced me to this fiber rich persimmon and I liked them very much. From then on I never miss enjoying them in every fall season. I bought persimmons from Costco last week to have it like regular fruit. When I opened to check them, they were mushy and very ripe, but I like them firm and ripe. So I searched for very ripe persimmon recipes from which I got this simple, raw, vegan dessert recipe. Most of the raw persimmon pudding recipes included ripe banana, which I didn’t use here.

Vegan Whole Wheat Walnut Dates Cake – Sugarless

I have a strong craving for sweets and I often control myself by keeping sugar free for couple of months. This time, I wanted to follow sugar free vegan diet but the craving for sweet could not be controlled and came up with this vegan whole wheat walnut dates cake. I know dates and honey are not sugar free but at least they contain natural sugars and some minor minerals. By now you know my love for whole grains over refined flours or rice, so I tried this recipe with whole wheat flour rather than all purpose flour and it came out very good.
