Multi Grain Roti ~ Multi Grain Flat Bread

Mixed flour roti

Pulka ( whole wheat tortillas with out oil) is everyday meal in my home and that is why I wanted to make them more nutritious by adding different flours. You don’t need to add exact measurement or type of flour mentioned below. Be creative to add any flour you have in your pantry. But adding wheat flour makes life easy in rolling Roti if you don’t have much skill in making Jowar or Bajra or Ragi Roti alone

Ingredients:

  1. Wheat Flour- 1/4 Cup + 2Tbsp( for dusting)
  2. Bajra/ Sajja Flour – 1/4 Cup
  3. Jowar/ Millet/ Jonna Flour – 1/4 Cup
  4. Ragi Flour – 1/4 Cup
  5. Soy Flour – 1/4 Cup
  6. Buck Wheat / Kuttu Flour – 1/4 Cup
  7. Oat Bran or Oat Flour – 1/4 Cup
  8. Chick Pea / Besan/ Gram Flour – 1/4 Cup
  9. Ground Flax Seeds –  4 Tbsp
  10. Hot Water – 3/4 to 1 Cup

Makes: 8 Rotis with 8″ diameter. 1 cup(240 ml) of flour – 4 Rotis

Method:

  1. Mix all the flour and now add water little by little to make smooth dough,Cover with damp cloth and leave it for 10 mins.
  2. Heat griddle (an iron pan works well) on medium high. Make medium lime size balls with dough, roll each ball into thin circle by dusting wheat flour when needed
  3. Place each circle on griddle and cook until Roti turns light brown on the skillet side. Slide roti with your fingers/spatula, and quickly flip to brown the other side (about 1-2 minutes)
  4. Cover Roti with plate while you cook the rest.
  5. These Rotis are bit crunchy not soft as wheat tortillas. Serve these Roti with any gravy curry or Dal. My favorite is Dal or Andhra chicken gravy curry.

Nutritional Information:

  • Soy and Gram flours are rich in protein.
  • Oat bran or oat flour rich in fiber.
  • Ragi flour is rich in calcium.
  • Jowar and Bajra flour are rich in calcium, iron, potassium, magnesium, zinc and B vitamins (especially niacin, folic acid and B6) . Since these contain no gluten, they are appropriate foods for those with celiac disease or other forms of allergies/intolerance of wheat.
  • Jowar or Bajra should not be consumed in great quantities by those with thyroid disease.
  • Flax Seed is Rich in Omega-3 Fatty Acids, fiber and Phytochemicals.
