Hyderabadi Double Ka Meeta ~ Shahi Tukda

Double ka meeta ~ Shahi tukda

Double ka meeta is an authentic Hyderabadi dessert. Bread is called double ka roti in Hindi as the dough raises doubles in size and meeta means sweet. Hence the name double ka meeta ( bread sweet).

Another popular Indian Sweet shahi tukda is similar to Double Ka Meeta with slight difference in serving style. In Shahi tukda, triangular shaped bread slices dipped in sugar syrup are added to full fat thick flavored milk just before serving, where as in double ka meeta, bread pieces in no definite shape are soaked in sugar syrup and added to flavored milk immediately during prepartion.

I occasionally make this type of desserts as it involves lot of unnecessary sugars and fat. Its my niece’s Saanvi Birthday, so its party time for us.

  1. White bread – 10 slices
  2.  Sugar – 1 Cup
  3. Water – 1 Cup
  4. Milk – 2 Cups
  5. Nuts – Cashews, Sliced almonds,pistachios – 3 Tbsp
  6.  Raisins – 1 Tbsp
  7. Cardamom powder – ¼ tsp
  8. Saffron – 5 strands
  9. Ghee + Oil – Enough to deep fry slices ( You can use ghee or oil or mix of both)

Shahi Tukda Method:

  1. Remove bread edges and cut bread into triangle or square shape slices.
  2. Toast them in oven at 200 F until dry. This process takes out moisture from bread which helps to absorb less ghee when deep frying. In India, my mom used to sun dry the bread or use couples of days old bread.
  3. Boil milk in a heavy bottomed pan and then reduce heat to simmer and cook until milk reduces to ¾’th to its original quantity. Keep stirring milk to avoid solids sticking to the bottom and burning. Add half of cardamom powder and keep them aside.
  4. Toast nuts in ghee and keep them aside.
  5. In batches, deep fry dried bread slices in ghee to golden brown color and place them on absorbent paper.
  6. In another pan, boil sugar and water until the syrups thickens little bit. Add remaining cardamom powder.
  7. Add few fried bread slices to sugar syrup until bread slices are soft. Arrange softened  slices in a serving bowl.
  8. Do previous step with the remaining fried bread slices in batches. Discard syrup if there is any left over or use it for other recipes.
  9. Pour warm milk on softened bread slices and garnish with toasted nuts.
  10. Serve warm or chilled depending on your preference. I like warm though

Shahi Tukda

Double Ka Meeta Method:

  1. Do the first 6 steps from shahi tukda.
  2.  Add deep fried  bread slices to the sugar syrup on medium heat.
  3. Mix until all the bread slices absorbs syrup well.
  4. Add toasted nuts and flavored milk, mix well and switch off the stove
  5. Serve warm or chilled.
