Milk Coconut Burfi ~ Kobbari Pala Kova

Coconut Burfi

Coconut is offered to GOD in Hindu rituals. Whenever we have pooja ceremony at home we are left with  ample coconuts, and my mother used to make this sweet with fresh grated coconut, milk and sugar. Coconut mixed with milk and sugar cooks until it forms a lump, which gives coconut-kova taste and soft chewy texture. I used to take this sweet to college and my friends empty and enjoy them in no time. If you are a coconut fan, you will love this burfi.

Makes: 12 to 16 squares

Ingredients:

  1. Coconut grated or shredded –  3 Cups
  2. Sugar –  2 ½ Cups (start with 2 Cups and adjust according to your taste)
  3. Milk – 1 Cup
  4. Grounded Nuts – 1 Cup ( I used most part almonds very less cashews and pistachios)
  5. Ghee – 2 tsp
  6. Cardamom powder – ½ tsp
  7. Nuts – to garnish

Method:

  • Grind coconut to coarse texture.
  • Grease pan with ghee.
  • In a heavy bottomed pan over medium low heat, take first 4  ingredients (coconut, sugar, milk, grounded nuts) and cook them around 20 minutes, stirring for every 2 minutes.
  • Add ghee and cardamom powder to coconut mixture.
  • Keep it on low heat, stirring more often to avoid burning and cook until it forms a lump ( when you take it in your hands to make a round ball, it should form a ball with out sticking to your hands. Be care full when you are handling hot mixture).
  • Take out from stove and pour in a greased pan, after 10 minutes,cut into desired shapes and garnish with nuts.
  • For making round balls, wait until the coconut mixture become warm to handle and make small lemon size balls.

Note:

  • I made this sweet with the double amount than mentioned above and it took  me 2 hours to  transfer to greased pan
