Brown Rice Payasam as naivedyam

Payasam made with rice and jaggery is very common in India.  After making whole grain prasadam for saddula bathukamma, I was still in a mood to do whole grain payasam on Dasara. So I wanted to make this quick and simple recipe. One of my aunt’s follows similar recipe with white rice, milk and sugar which is called pala padiyam (milk kheer) accompanied with makka garelu (corn vada). I got this idea from my aunt recipe.

In this recipe, I used brown rice instead of refined white rice, which is coarsely grinded and cooked in milk and combined with jaggery syrup.

Ingredients:

  1. Brown Rice – ¼ Cup
  2. Jaggery – ¼ Cup
  3. Milk – 2 Cups ( I used 2% fat milk)
  4. Water – 1 ¼ Cups
  5. Cardamom Powder – Big pinch
  6. Cashews roasted in ghee – To garnish (Optional)

Method:

  1. Wash and soak brown rice in 1 Cup water for 20 minutes.
  2. Boil milk on medium-heat while the rice is soaking.
  3. Melt jaggery in ¼ Cup water in microwave or on stove top, keep aside to cool it (Adding hot jaggery syrup to the payasam can curdle the milk)
  4. Coarsely grind brown rice with water, then add brown rice with water to boiling milk and stir continuously for 1 min.
  5. Stir frequently for 10 minutes or until the brown rice cooks completely, then add strained jaggery syrup, cardamom powder and mix well. Cook for another 3 minutes and garnish with cashews.
  6. Offer naivedyam and serve warm.

    This is a good idea!!!. Not everyone can enjoy the hard, chewy texture of brown rice. I could now give a try for this easy to eat, flavorful dish…..
