Broccoli Split Moong dal Stri fry
Broccoli is rich in Vitamin C, dietary fiber and split moong beans are rich in dietary fiber with no cholesterol.When both nutritious ingredients are combined with Indian spices, the result is a delicious healthy food.
Ingredients:
- Broccoli florets cut and chopped – 4 Cups
- Yellow Split Moong daal – 1 Cup ( cook in microwave for 2 mins or soak for 30 mins)
- Oil – 2 tbsp
- Mustard seeds – 1/4 tsp
- Cumin seeds – 1/2 tsp
- Onion- 1 small
- Green chillies- 6 number ( adjust)
- Turmeric powder – 1/4 tsp
- Ginger Garlic paste – 1/2 tsp
- Curry leaves – few
- Salt- 1 tsp (adjust)
- Coriander leaves – to garnish
Servings: 4
Method:
- Heat Pan on medium low, add oil and when the oil is heated add mustered seeds, add cumin seeds when the mustard seeds start to splatter, add onion followed by curry leaves, greenĀ chilliesĀ and turmeric powder.
- When the onions turn translucent, add ginger garlic paste, stir and cook for 1 min.
- Add moong daal and stir fry for 3 mins.
- Add broccoli florets, sprinkle salt, mix everything and cover it with lid.
- Check and mix for every 3 mins until broccoli florets are 3/4’th cooked, remove lid and cook until broccoli is fully done (this is to to reduce steam and make it look dry).
- Garnish with coriander leaves and serve hot with rice or roti.
Broccoli is one of my favorite vegetables in a salad or stir fry! But I never had an idea we could make a very tasty Indian dish with it. Thanks for this great recipe, now Broccoli will always be on my shopping list!
